2 big ripe tomatoes
120g fine bulgur
½ big onion
2 cloves of garlic
½ tbsp tomato paste
½ red bell pepper
2 tbsp corn flour (optional)
Salt & Pepper
Wash the bulgur under cold water for a couple of minutes.
Blend tomatoes, onions, garlic and bell peppers, until you have a smooth juice. Add also the tomato paste.
Add this juice obtained to the bulgur, season with salt, pepper, and cumin.
Chop the parsley and blend the walnut and add to the mixture. Leave overnight to combine and absorb perfectly the juice.
If the mixture needs extra liquid, you can add some extra tomato juice or vegan stock.
Remove the mixture from the fridge in advance in order to serve the croquette at room temperature.
If needed, adjust the mixture adding some corn flour to obtain a thick consistency.
Make the croquette with your hands.
